People looking for a more bohemian environment, something that inspires creativity, will likely look for a small local shop instead of Starbucks or one of the other big chains. Starbucks popularized coffee culture by bringing awareness to independent shops that were once relatively unknown. Now James Bullock, a Seattle software consultant, says: “Starbucks no longer defines the coffee conversation. It is defined by independents,” (Clark). While talking about his love of coffee and the environment he tries to create in his establishment, Gray mentions European coffee shops "where anyone can rub shoulders with writers and other creative types and emerge wiser" (Buck).
