The pies range from a variety of fruits, nuts, vegetables and even meat. There arose sayings and beliefs such as "as American as apple pie" and the belief that the first Thanksgiving featured pumpkin and pecan pies, and that the pies had always been light and fluffy; but how true are these theories? Pies are often formed using a pastry shell that served primarily as a baking pan, storage container, and serving vessel. For hundreds of years it served as the only form of baking container, essentially everything was a cake. Early pies, which often contained meat, were tall, with straight sides, and included sealed lids and floors. These cakes were often called “coffins” or “coffins” (the word at the time meant box or basket). Pies that contained assorted meats and sauce components were cooked more like a modern panless casserole (the crust itself was the pan, the shell hard and inedible) they were open pies known as traps.
